MACKEREL, POTATO AND BEETROOT SALAD

Mackerel Fillets in Brine 125g
 
The excellent qualities of Delicius mackerel fillets and all their content of precious nutrients, with the natural light preserving technique: only water and salt. Less calories, but with all the taste of healthy and delicate fish.
 
INGREDIENTS FOR 1 SERVING
 
1 tin of mackerel fillets in brine 125g

2 boiled potatoes 

1 red onion 
1 boiled red beet 
Garlic
Parsley 
Fresh mint
Extra virgin olive oil 
Vinegar
 

PREPARATION 

 Marinate the drained mackerel fillets for about 10 minutes in a bowl with chopped garlic, parsley a couple of fresh mint leaves and olive oil. Then serve the mackerel fillets in a salad with 2 cut boiled potatoes and 1 boiled red beet. Add some red onion rings, previously lightly sautéed in a pan with water and vinegar. Season with oil, salt and white vinegar. 
A fresh salad, full of good nutrients. The various ingredients are an exquisite contrast of sweet and salty. A colourful salad, with extra flavour due to the addition of herbs such as mint and parsley.
