Avocado Waffles with Anchovy Sauce

INGREDIENTs for 4 PEople

For the Waffles:
250g of flour
250g of milk
2 eggs
30g of seed oil (eg sunflower seeds)
1 teaspoon of baking powder
1 pinch of salt
1 pinch of sugar

For the anchovy sauce:
6 Delicius Double anchovy fillets with chilli
4 tablespoons of fresh cream
1 tablespoon of peanut butter (you can replace with Tahin)
1 or 2 tablespoons of cold vegetable broth (if you want a smoother sauce)

For the filling:
2 ripe avocados
1 tablespoon of lemon juice
4 eggs
4 radishes
Watercress
Salt and Pepper

PREPAration

Start by preparing the waffles: Work the eggs, milk and oil with the electric whisk. Little by little add the flour (sifted with the baking powder), then the sugar and salt, always working with the whisk. 
Heat the waffle iron, lightly oil it and pour the batter with a ladle on it. Cook the waffles for about 2 minutes (or until they become beautifully golden).
In the meantime, prepare the sauce by blending the (drained form their oil) Delicius Double anchovies with chilli, the peanut butter and the fresh cream. Slowly add the vegetable broth until you get the desired texture.

Then crush the avocados in a bowl with a fork to obtain a puree. Add the lemon juice, salt and pepper and mix well.

Start assembling the waffles: Spread a spoonful of anchovy sauce on each waffle, continue with a layer of avocado purée.
Cook the poached eggs (one at a time), and place each on a waffle when cooked.
Decorate with very thin slices of radish and some chopped watercress. Add a pinch of salt and the ground pepper. Finally garnish with two DOUBLE anchovy fillets with chili pepper. Serve each waffle with a small side of the anchovy sauce.
