INGREDIENTs
2 small potatoes
1 pack of Delicius mackerel fillets in olive oil
15/20 taggiasche olives
4 round tomatoes
Salt and pepper
Extra virgin olive oil
6/8 squash blossoms
6/8 squash blossoms
PREPARAtion
First boil the potatoes for 15 minutes, then remove the upper part and the inside of the tomato, keeping it aside.
Once the potatoes are tender, remove their skin and smash them with a fork.
Add the taggiasche olives, the inside of one of the tomatoes, the cut flower blossoms, and the Delicius mackerel fillets.
Mix them and fill the tomatoes. Put them in the oven at 180° for 18/20 minutes and serve hot.
