Fried Vegetables with Delicius Anchovy Sauce

Ingredients for 4 people

INGREDIENTS

  • Delicius Anchovy fillets in olive oil, 1 jar;
  • Mixed vegetables (cauliflower, broccoli, mushrooms, chicory hearts), 600 g;
  • Flour, 150 g;
  • Sparkling water, 2,5 dl;
  • Salt;
  • Peanut oil needed to fry.

For the sauce:

  • Leek, 1;
  • Milk, 4 spoons;
  • Delicius Anchovies, a couple;
  • Extra virgin olive oil.

PREPARATION

  • For the sauce: chop the leek and make it sauté in a pan with milk and 1/2 glass of water, then when it is soft and has absorbed most of the liquid, add  the Delicius anchovies according to preference and 2 spoons of extra virgin olive oil, until you have obtained a sauce;
  • Clean the vegetables and cut them into pieces.
  • Heat the peanut oil.
  • In a bowl mix the flour with the sparkling water and 2 pinches of salt.
  • Immerse the vegetables in the batter and then bring them to the boiling oil. Drain them when crunchy.
  • Serve them with a side of the Delicius Anchovy sauce.
