INGREDIENTS
- Grilled mackerel fillets in olive oil, 110 g;
- Paccheri rigati pasta, 180 g;
- Tomato puree, 200 g;
- Olives, 20 g;
- Capers, 10 g;
- Parsley, 1 bunch;
- Chili pepper;
- Garlic, 1 clove;
- Oil;
- Salt.
PREPARATION
- In a frying pan, sauté a couple garlic cloves and olive oil.
- When the garlic is golden, add the tomato puree, the chili pepper, capers and olives, then adjust with salt and simmer for about 15 minutes.
- Chop the parsley and set aside.
- Cook the paccheri in boiling salted water.
- In a bowl, flake the mackerel fillets, then add them to the sauce and cook for another 5 minutes.
- Drain the paccheri in the sauce, then add the fresh parsley.
- Serve with a whole mackerel fillet and a few parsley leaves as garnish.
