INGREDIENTS
For the tartare:
- Avocado (hard, almost unripe), 1;
- Mango, 1;
- Spicy Mackerel fillets in olive oil Delicius, 1 pack.
For the mayonnaise:
- Eggs,1;
- Lime, 1;
- Seed oil, 200 g.
For the confit tomatoes:
- Cherry tomatoes, 5;
- Dried oregano;
- Dried thyme;
- Rosemary;
- Extra virgin olive oil;
- Powdered sugar;
- Fine salt;
- Lemon zest, 1;
- Orange zest, 1.
PREPARATION
For the cherry tomatoes:
- Wash the cherry tomatoes, then cut them in half and arrange them with the cut surface on top in a baking dish with baking paper.
- Season with all ingredients, then bake at 140°C for about 2 hours.
For the lime mayonnaise:
- Crack an egg into a blender glass, then pour in the seed oil, lime juice and a pinch of salt.
- Whip the mayonnaise with an immersion blender, then add the lime zest.
For the tartare:
- Clean the avocado and mango, then dice them and season with oil, salt and pepper.
- Lay the tartare on a plate, possibly helping yourself with a pasta cup of your favorite shape.
- Garnish with the spicy mackerel fillets, lime mayonnaise and confit tomatoes.
