Cold pasta with mackerel, mint asparagus, crumbled feta and lime

INGREDIENTS:

Wheels (Pasta), 200 g;
Asparagus, 400 g;
Lime (juice and zest), 1;
Mint, to taste. ;
Feta cheese, 100 g;
Delicius Mackerel fillets in olive oil, 125 g;
Oil ;
Salt ;
Pepper.

You can substitute mint with basil.

PREPARATION:

Clean the asparagus from the most earthy and leathery part then cut the stem into rounds and the tips in half lengthwise.
Then cook in a skillet with a drizzle of oil and a pinch of salt until the asparagus is cooked through while remaining crispy: this will take 7-8 minutes.
Finely chop the mint and add it to the asparagus in a bowl. Season with lime zest and juice.
Cook pasta and drain al dente then cool under cold water to lock in the cooking process then transfer to a bowl and toss with oil, crumbled feta, mint asparagus and olive oil mackerel fillets. Stir well to mix everything together.
Serve and garnish with a drizzle of oil, a few mint leaves and a sprinkle of pepper.
