Anchovies and saffron linguine

INGREDIENTS

Linguine, 200 g;

Saffron, 1 sachet;

Saffron threads, to taste;

Alici Delicius Cantabrico, 6 fillets;

Butter, 30 g;

Oil, to taste.

 

Tips:

  • You can omit the saffron threads and add a final touch of color with either classic or smoked paprika.

PREPARATION

In a pan, melt 3 or 4 anchovy fillets, then dilute with a ladle of boiling water and dissolve a sachet of saffron in it.

Cook the pasta in salted boiling water, and when there are 2 minutes left in the cooking time, drain it directly into the pan with the seasoning.

Finish cooking the pasta by simmering it in the pan.

Off the heat, stir in the butter.

Plate the pasta in a nest, drizzling it with the anchovy and saffron sauce and garnishing with an anchovy fillet on each plate and a few saffron threads.
