Vegetable Fritters with Greek Yogurt Mint Sauce and Sardines

Ingredients:

For the fritters:

– Zucchini, 1
– Carrot, 1
– Red bell pepper, 1
– Onion, 1

For the batter:

– All-purpose flour, 200 g
– Water, 300 ml
– Cornstarch, 2 tablespoons
– White sesame seeds, 1-2 tablespoons
– Salt, to taste

For the sauce:

– Greek yogurt, 2 cups
– Fresh mint, to taste
– Olive oil, to taste
– Salt, to taste
– Pepper, to taste

For garnish:

– Mint sauce, to taste
– Delicius sardines, to taste

 

Tips:

– You can substitute mint with dill and add a teaspoon of mustard to the yogurt.

– Feel free to use your favorite vegetables for the fritters.

 

Instructions:

  1. Cut the vegetables into thin strips.
  2. In a bowl, prepare the batter by mixing all the ingredients.
  3. Heat a little vegetable oil in a pan and form the fritters using a spoon.
  4. Cook until golden on both sides.
  5. Prepare the sauce by mixing all the ingredients, including finely chopped mint.
  6. Assemble by creating a stack of fritters, alternating each layer with the mint yogurt sauce. Top with sardines.
