INGREDIENTS
- Cherries, 100 g;
- Grilled Mackerel fillets in brine, 1 pack;
- Potatoes, 2;
- Eggplant in oil, 6 slices;
- Chopped parsley.
For the sweet-and-sour onions:
- Red onion, 1;
- Red wine vinegar, 25 ml;
- Water, 75 ml;
- Brown sugar, 1 tbsp;
- Extra virgin olive oil;
- Salt.
PREPARATION
For the sweet-and-sour onions:
- In a bowl, mix the brown sugar with water and vinegar to make a smooth mixture.
- Cut the onions finely, then sauté in a pan with a drizzle of extra virgin olive oil.
- Add the mixture of vinegar, sugar, salt and water.
- Let the liquid absorb completely and remove the caramelised onions.
For the fruit salad:
- Boil the potatoes in salted water.
- Open the cherries in half and remove the stone.
- When the potatoes are ready, cut them in small slices and arrange them on the base of the dish.
- Add the cherries and season with a drizzle of oil and a sprinkle of pepper.
- Finish the dish with pieces of the eggplant in oil, the caramelised and the Mackerel Fillets.
